Wacky Pineapple Cake

This sweet cake is a great treat for dessert or breakfast. Looks cool too!

Cake Ingredients

2 cups flour

2 tsp. baking soda

1 large can crushed pineapple {not drained}

1 ¾ cups sugar

1 tsp. Vanilla

Flour and oil for greasing pans

Icing Ingredients

1 small can Pet milk

1 stick margarine

¾ cup confectioners sugar

Few drops of vanilla

1 small can crushed pineapple, drained

Preparation

  • Mix all cake ingredients together and pour into large greased and floured liner pan.
  • Bake in Dutch Oven for 35 minutes at 350 degrees.
  • To make icing, boil all ingredients except pineapple 3 minutes; let cool.
  • When cake is baked and slightly cooled, punch holes in cake and pour icing over cake.
  • Decorate top of cake with small can of crushed pineapple.

Note: This recipe makes two round layers and enough icing for both.
